Smoke and sugar

Two flavors that don’t normally go together right? All my chef coworkers were doubtful it would actually work. What they didn’t realize was those flavors already existed together in the most american summer treat - the classic campfire s’more. A marshmallow toasted perfectly (or until black and melted) that absorbs the smoke from the campfire, pairs so perfectly with a piece of a chocolate bar and sandwiched in between two pieces of cinnamon graham crackers. In fact, that was what inspired the first smokey and sweet dessert. My dad’s smokey s’mores birthday cake. i used my brand new smoke gun to infuse the flavor of smoke into the cake and the result was incredible. It actually tasted like I roasted the cake over the campfire.

After that, i decided to create my own unique flavor - smoke and sugar. I replaced normal cocoa powder with black cocoa - an alkaline treated, super processed dutch cocoa powder that turns black when baked. i added a little bit of liquid smoke to the batter and got a dark and smokey flavor unlike anything i’ve ever had (imagine roasting an oreo over a campfire). And thus, smoke and sugar was born.

Painted Cakes

When I used to nanny, i was up at 7 in the morning with the kids while they watched one of their favorite baking shows when i saw the contestant paint a very quick christmas wreath on the cake. up until that point i never knew cake painting was a thing. I used to paint in college, so I was eager to transfer those skills into my baking. I began researching how to paint cakes. I learned the edible paint was a combo of gel food coloring and vodka, but normal frosting wasn’t exactly the most stable surface to paint on. Then one summer, while making a white chocolate glaze, I made a mistake and the glaze turned matte and discovered that it made a perfect surface to paint on. Smooth, sturdy, and it perfectly preserved the moisture of the cake, allowing me to paint for long hours if necessary.
